Crab Louis Salad
serves 4
Ingredients
1 lb cooked crab meat
1 lb asparagus, trimmed, cooked, and cooled
1 hd bibb lettuce, bite-size pieces
2 ribs celery, thin sliced
1 ea cucumber, sliced
1 C cherry tomatoes, halved
2 ea eggs, hard-boiled, peeled, quartered
1 ea avocado, sliced
1/2 C mayonnaise
1 T lemon juice
2 t sweet pickle relish
1/2 t Worcestershire sauce
1/4 t chili powder
1/4 t smoked paprika
Instructions
Whisk together the mayonnaise, lemon juice, relish, Worcestershire sauce, chili powder and paprika, then season to taste.
Toss the lettuce in the dressing, then plate.
Garnish with the crab, asparagus, tomatoes, eggs, and avocado, then serve.
